Crème Fraîche. If you don’t have it or don’t feel like buying it, you’ll need to give yourself a day’s notice so that you can make your own. All you need to do is:
Stir 2 tablespoons of buttermilk into 2 cups of heavy cream in a glass quart-size jar.
Cover the jar with a piece of cheese cloth (or paper towel) and rubber band. Let it stand at room temperature until it reaches desired thickness, about 8 to 24 hours and continuing to thicken over time. Give it a stir, then refrigerate up to two weeks.
