one sweet happy meal

June 16th, 2011

Bakerella calls this one “Fast Food Fun” and it’s three for three. Fast because everything is made from a mix – brownie burgers, cupcake buns and a side of sugar cookie french fries. Food – obviously. And fun – to look at, to make, and to eat!

Mix 1: Brownies. Bake in a 9×13 pan and let cool completely.

Mix 2: Sugar cookies. Roll out the dough and cut it into thin strips (once down the middle in half lengthwise and into thin strips across, keeping in mind that the dough will spread while it bakes). Remove the alternating strips and bake separately. Sprinkle sugar on top of the dough. Bake for about 8 minutes at 350 degrees. Sprinkle more sugar on top while they are still warm, lightly rubbing it on to make sure it sticks good.

Mix 3: Cupcakes. Bake the cupcakes using a yellow cake mix, replacing the water with 1 cup of milk and using paper liners to keep from having brown cupcake buns. Let cool.

How to Assemble. Cut each cupcake in half or thirds. Cut out circles from the brownies and place one on top of the bottom half of each cupcake bun. Decorate with frosting condiments then place the top of the cupcake bun on the brownie burger and press gently.

How to Decorate. Divide a can of frosting in three bowls (two with smaller amounts for the ketchup and mustard and one with a little more for the lettuce). Color the frosting red, yellow and green and place each color in a plastic bag. Snip off a small tip of one corner and gently squeeze the mustard and ketchup on top of the brownie burger. Then squiggle on the lettuce. For the finishing touch, brush a very thin layer of water over the top of the bun and sprinkle with sesame seeds.
