Pumpkin cookies

My mom made these cookies for my second grade classroom. The recipe was given to her by my second grade teacher and comes from Yorkie’s Restaurant in Camden, Maine. They are a nice bite size alternative to pie.

Pumpkin Cookies

Cream together

2 1/4 cups sugar

1 cup plus 2 Tablespoons Crisco butter-flavored shortening

Add

2 cups canned pumpkin

1 teaspoon vanilla

Sift together

4 cups all-purpose flour

1 Tablespoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon cloves

1 teaspoon ginger

2 Tablespoons baking powder

Add dry ingredients to creamed mixture. Add  2 cups of raisins (optional).

Drop on a greased baking sheet. Bake at 400 degrees for 12 minutes.
